Dark Chocolate Chip Pumpkin Muffins
INGREDIENTS:

1 cup of whole wheat flour

1 cup of oats

1 tablespoon of baking powder

1 teaspoon of baking soda

1 teaspoon of cinnamon

1/4 teaspoon of nutmeg

1/2 teaspoon of salt

1 cup of pumpkin
-
1/2 cup of brown sugar

1/3 cup of Greek yogurt (use vanilla or plain)

3/4 cup of almond milk
-
1/4 cup of unsweetened applesauce
-
1 teaspoon of vanilla

1/2 cup (sometimes more ;) ) of dark chocolate chips
DIRECTIONS:

Preheat oven to 350 degrees

Mix dry ingredients first in a large mixing bowl

Mix wet ingredients in a smaller bowl

Once wet ingredients are thoroughly mixed, slowly add to dry ingredients, until mixed well
-
Scoop hearty servings into muffin tins and place in oven and bake for 25-30 minutes
