Dark Chocolate Chip Pumpkin Muffins

INGREDIENTS: 

  • 1 cup of whole wheat flour 

  • 1 cup of oats

  • 1 tablespoon of baking powder 

  • 1 teaspoon of baking soda

  • 1 teaspoon of cinnamon 

  • 1/4 teaspoon of nutmeg 

  • 1/2 teaspoon of salt 

  • 1 cup of pumpkin 

  • 1/2 cup of brown sugar 

  • 1/3 cup of Greek yogurt (use vanilla or plain) 

  • 3/4 cup of almond milk 

  • 1/4 cup of unsweetened applesauce 

  • 1 teaspoon of vanilla 

  • 1/2 cup (sometimes more ;) ) of dark chocolate chips

DIRECTIONS: 

  • Preheat oven to 350 degrees

  • Mix dry ingredients first in a large mixing bowl

  • Mix wet ingredients in a smaller bowl

  • Once wet ingredients are thoroughly mixed, slowly add to dry ingredients, until mixed well 

  • Scoop hearty servings into muffin tins and place in oven and bake for 25-30 minutes 

  • Each muffin is worth 155 calories!
