Strawberry & Raspberry Oatmeal Bars

INGREDIENTS:

1 cup of old fashioned rolled oats

3/4 cup of whole wheat flour

1/3 cup of light brown sugar

1/4 t of ground ginger
-
1/4 t of salt

6 T unsalted butter
-
1 T freshly squeezed lemon juice (about half a lemon)

1 T granulated sugar
-
2 cups of small diced strawberries and raspberries
For the vanilla glaze (optional, but delicious):

1/2 cup of powdered sugar, sifted

1 t vanilla extract
-
1 T milk (any kind)
DIRECTIONS:

Preheat oven to 375

Line an 8x8 in baking pan with parchment paper

In a medium bowl, combine oats, brown sugar, flour, ginger, adn salt. Pour in the melted butter and stir until it forms clumps and ingredients are evenly moistened. Set aside 1/2 cup of the crumbled mixture, then press the rest into an even layer in the bottom of the pan.

Scatter half of the berries over the crust. Sprinkle on the lemon juice and 1/2 T of granulated sugar. Scatter on remaining berries, and remaining 1/2 T of sugar. Sprinkle the reserved crumbs evenly over the top.

Bake the bars for 35-40 min. Remove bars, let cool.

While bars cool, prepare the glaze: in a bowl, briskly mix together powdered sugar, vanilla, and milk until smooth. Drizzle the bars with glaze, slice, and serve!
