Strawberry & Raspberry Oatmeal Bars


  • 1 cup of old fashioned rolled oats

  • 3/4 cup of whole wheat flour 

  • 1/3 cup of light brown sugar

  • 1/4 t of ground ginger

  • 1/4 t of salt 

  • 6 T unsalted butter 

  • 1 T freshly squeezed lemon juice (about half a lemon) 

  • 1 T granulated sugar

  • 2 cups of small diced strawberries and raspberries 

For the vanilla glaze (optional, but delicious): 

  • 1/2 cup of powdered sugar, sifted 

  • 1 t vanilla extract 

  • 1 T milk (any kind) 


  • Preheat oven to 375

  • Line an 8x8 in baking pan with parchment paper

  • In a medium bowl, combine oats, brown sugar, flour, ginger, adn salt. Pour in the melted butter and stir until it forms clumps and ingredients are evenly moistened. Set aside 1/2 cup of the crumbled mixture, then press the rest into an even layer in the bottom of the pan. 

  • Scatter half of the berries over the crust. Sprinkle on the lemon juice and 1/2 T of granulated sugar. Scatter on remaining berries, and remaining 1/2 T of sugar. Sprinkle the reserved crumbs evenly over the top. 

  • Bake the bars for 35-40 min. Remove bars, let cool. 

  • While bars cool, prepare the glaze: in a bowl, briskly mix together powdered sugar, vanilla, and milk until smooth. Drizzle the bars with glaze, slice, and serve!
